Preheat oven to 350°F (175°C).
In a medium bowl, mix together the flour, baking powder, and salt.
In a large bowl, cream together the butter and sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract and apple cider.
Gradually mix in the flour mixture until just blended.
Fold in the apples.
Pour the batter into a greased 9x5 inch loaf pan.
Mix together the cinnamon and sugar and sprinkle over the top of the batter.
Bake for 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
Cool on a wire rack before serving.
