- 1 large eggplant, cut into 1/2-inch slices
- 2 tablespoons olive oil
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 0.5 cup crumbled feta cheese
- 0.5 cup pitted olives, halved
- 1 cup cherry tomatoes, halved
- 0.25 cup fresh parsley, chopped
Preheat the grill to medium-high heat.
Brush the eggplant slices with the olive oil and sprinkle with the salt and pepper.
Place the eggplant on the grill and cook for 4-5 minutes per side, or until lightly charred and tender.
Remove the eggplant from the grill and transfer to a platter.
