Ingredients
  

  • 4 potatoes, peeled and diced
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 2 tablespoons chopped parsley
  • 0.25 cup sour cream
  • null Salt and pepper to taste

Instructions
 

  • In a large pot over medium heat, sauté the onion, carrots, celery, and garlic in a tablespoon of olive oil until the vegetables are soft, about 5 minutes.
  • Add the potatoes, thyme, and chicken broth and bring to a boil. Reduce heat and simmer for 20 minutes, or until the potatoes are cooked through.
  • Stir in the parsley and season with salt and pepper to taste.
  • Remove from heat and stir in the sour cream.
  • Serve with crusty bread, if desired.
