- 1 eggplant, sliced into 1/4-inch rounds
- 0.25 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme leaves
- 1 teaspoon fresh oregano leaves
- 1 teaspoon fresh rosemary leaves
