In a large bowl, combine flour, sugar, salt, and yeast. Add warm water and olive oil, and mix until dough forms.
On a floured surface, roll out the dough until it is about 1/4 inch thick.
Transfer the dough to a baking sheet lined with parchment paper.
Spread the mozzarella cheese on the dough and top with the beaten eggs.
Sprinkle Italian herbs on top and bake in a preheated oven at 350°F for 15 minutes.
Remove from the oven and top with fresh tomatoes. Cut into slices and serve.
