In a large bowl, whisk together the flour, baking powder, salt and ground cinnamon.
In a separate bowl, whisk together the milk, melted butter and egg.
Add the wet ingredients to the dry ingredients and whisk until just combined.
In a separate bowl, combine the chopped apples, brown sugar and ground cinnamon. Mix until the apples are coated.
Heat a large skillet over medium heat. Grease the skillet with butter or oil.
Drop 1/4 cup of the pancake batter onto the skillet and top with a scoop of the apple mixture.
Cook the pancakes until lightly browned, about 2 minutes per side. Flip and cook on the other side until golden brown.
Repeat with remaining batter and apple mixture.
Serve pancakes with a drizzle of maple syrup.
