Authentic Apple Pie Pancakes

  • Large skillet, whisk, spatula, measuring cups/spoons

Ingredients
  

  • 1 cup flour
  • 2 teaspoons baking powder
  • 0.25 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup milk
  • 2 tablespoons melted butter
  • 1 egg
  • 2 apples, peeled and chopped
  • 2 tablespoons brown sugar
  • 0.5 teaspoon ground cinnamon

Instructions
 

  • In a large bowl, whisk together the flour, baking powder, salt and ground cinnamon.
  • In a separate bowl, whisk together the milk, melted butter and egg.
  • Add the wet ingredients to the dry ingredients and whisk until just combined.
  • In a separate bowl, combine the chopped apples, brown sugar and ground cinnamon. Mix until the apples are coated.
  • Heat a large skillet over medium heat. Grease the skillet with butter or oil.
  • Drop 1/4 cup of the pancake batter onto the skillet and top with a scoop of the apple mixture.
  • Cook the pancakes until lightly browned, about 2 minutes per side. Flip and cook on the other side until golden brown.
  • Repeat with remaining batter and apple mixture.
  • Serve pancakes with a drizzle of maple syrup.
