- 1 tablespoon olive oil
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 0.5 teaspoon paprika
- 0.25 teaspoon cayenne pepper
- 0.5 teaspoon salt
- 0.5 teaspoon black pepper
- 1 cup cooked rice
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels, frozen or canned, drained
Heat the oil in a large skillet over medium heat. Add the onion and bell pepper and cook for 5 minutes, stirring occasionally.
Add the garlic and spices and cook for 1 minute, stirring constantly.
Add the cooked rice, tomatoes, beans and corn. Stir to combine and cook for 3-4 minutes, or until the vegetables are tender.
