Ingredients
  

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 0.5 teaspoon paprika
  • 0.25 teaspoon cayenne pepper
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup cooked rice
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels, frozen or canned, drained

Instructions
 

  • Heat the oil in a large skillet over medium heat. Add the onion and bell pepper and cook for 5 minutes, stirring occasionally.
  • Add the garlic and spices and cook for 1 minute, stirring constantly.
  • Add the cooked rice, tomatoes, beans and corn. Stir to combine and cook for 3-4 minutes, or until the vegetables are tender.
  • Serve with your favorite toppings and enjoy!
