Preheat oven to 350 degrees F.
In a large skillet, heat olive oil over medium heat. Add garlic, onion, carrots, and celery and cook for 5 minutes, stirring occasionally.
Add chicken and season with thyme, oregano, rosemary, paprika, salt, and pepper. Cook for an additional 5 minutes, stirring occasionally.
Add white wine, chicken broth, and heavy cream. Bring to a simmer and cook for 10 minutes.
Transfer to a 9x13 inch baking dish and sprinkle with parmesan cheese.
Bake in preheated oven for 25-30 minutes, or until chicken is cooked through.
