Equipment

  • large skillet, wooden spoon, measuring cups and spoons, cutting board, chef’s knife, food processor or blender

Ingredients
  

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 pounds chicken, cut into cubes
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala powder
  • 1 can coconut milk
  • null salt and pepper to taste
  • 0.25 cup fresh cilantro, chopped

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add the onion and garlic and sauté until they are softened, about 5 minutes.
  • Add the chicken and cook until it is nearly cooked through, about 10 minutes.
  • Add the spices and cook for 1 minute.
  • Add the coconut milk and bring to a simmer. Simmer until the chicken is cooked through, about 10 minutes.
  • Season with salt and pepper to taste.
  • Garnish with fresh cilantro and serve over a bed of white rice.
