Ingredients
  

  • 2 medium eggplants, sliced into 1/4-inch thick rounds
  • 2 tablespoons olive oil
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon freshly ground black pepper
  • 0.5 cup crumbled feta cheese
  • 0.5 cup pitted kalamata olives, chopped

Instructions
 

  • Preheat the grill to medium-high heat.
  • Brush both sides of the eggplant slices with olive oil and season with salt and pepper.
  • Grill the eggplant slices for 4-5 minutes per side, or until lightly charred and tender.
  • Transfer the grilled eggplant to a serving plate and top with feta cheese and olives.
  • Garnish with chopped parsley and serve.
