- 2 medium eggplants, sliced into 1/4-inch thick rounds
- 2 tablespoons olive oil
- 0.5 teaspoon sea salt
- 0.25 teaspoon freshly ground black pepper
- 0.5 cup crumbled feta cheese
- 0.5 cup pitted kalamata olives, chopped
Preheat the grill to medium-high heat.
Brush both sides of the eggplant slices with olive oil and season with salt and pepper.
Grill the eggplant slices for 4-5 minutes per side, or until lightly charred and tender.
Transfer the grilled eggplant to a serving plate and top with feta cheese and olives.
