- 2 medium eggplants, sliced into rounds
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon oregano
- 0.5 teaspoon cumin
- 0.5 teaspoon black pepper
- 2 tablespoons freshly chopped herbs (such as parsley, chives, mint, or basil)
- 0.25 cup freshly grated parmesan cheese
Preheat a grill to medium-high heat.
In a small bowl, combine the garlic powder, smoked paprika, oregano, cumin, black pepper, and freshly chopped herbs.
Brush the eggplant slices with the olive oil on both sides. Sprinkle the spices and herbs over the eggplant slices.
