Ingredients
  

  • 2 large eggplants
  • 0.5 cup feta cheese
  • 0.5 cup olives, sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon salt

Instructions
 

  • Slice the eggplants into 1-inch thick slices and place in a large bowl.
  • Drizzle the olive oil over the eggplant slices and sprinkle with garlic, oregano, black pepper, and salt. Mix until the slices are evenly coated.
  • Preheat the grill over medium-high heat and place the eggplant slices on the grill. Grill for 5-7 minutes on each side, or until the eggplant is tender and lightly charred.
  • Remove the eggplant slices from the grill and place on a serving plate. Top with feta cheese and olives.
  • Serve warm.
