- Grill pan, knife, cutting board, bowl, and spoon. 
- 1 large eggplant, sliced into 1/2-inch rounds
- 0.5 cup feta cheese, crumbled
- 0.5 cup olives, chopped
- 2 tablespoons olive oil
- 1 teaspoon oregano
- 1 teaspoon thyme
- null Salt and pepper, to taste
- Preheat the grill pan over medium-high heat. 
- Brush the eggplant slices with olive oil and season with oregano, thyme, salt, and pepper. 
- Grill the eggplant slices for 5-7 minutes on each side, or until tender and lightly charred. 
- When the eggplant slices are finished cooking, top with the feta cheese and olives. 
- Serve warm.
