Ingredients
  

  • 1 large eggplant, sliced into 1/2-inch rounds
  • 0.5 cup feta cheese, crumbled
  • 0.5 cup olives, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • null Salt and pepper, to taste

Instructions
 

  • Preheat the grill pan over medium-high heat.
  • Brush the eggplant slices with olive oil and season with oregano, thyme, salt, and pepper.
  • Grill the eggplant slices for 5-7 minutes on each side, or until tender and lightly charred.
  • When the eggplant slices are finished cooking, top with the feta cheese and olives.
  • Serve warm.
