Growing up, my family would spend summer days grilling outdoors and enjoying each other’s company. There was nothing better than the smell of the grill and the anticipation of what delicious dish would be served. This Secret Garden Grilled Eggplant has become one of our favorite family recipes!
Grilling eggplant is a great way to get a smoky flavor and a slightly charred exterior. For this recipe, I add a mix of olives and feta cheese to the eggplant slices to give it a Mediterranean twist. The feta cheese adds a creamy, salty flavor and the olives add a hint of sweetness. I also toss in some herbs for additional flavor. The result is an eggplant dish that is delicious and healthy.
This Secret Garden Grilled Eggplant is perfect for a summer meal. Serve it with a side of rice or quinoa, or as a side dish to grilled fish or meat. You can also serve it as an appetizer or a light lunch. No matter how you serve it, it’s sure to be a hit with your family and friends!
- If you don’t have a grill pan, you can cook the eggplant on a regular pan.
- You can also add other herbs such as rosemary or basil.
- For a more intense flavor, you can marinate the eggplant slices in olive oil, herbs, and spices for 30 minutes before grilling.
- For a vegan version, omit the feta cheese.
