Ingredients
  

  • 3 large eggs
  • 0.5 cup chopped onion
  • 0.5 cup diced red bell pepper
  • 0.25 cup diced jalapeno pepper
  • 0.25 cup diced green bell pepper
  • 0.5 cup cooked black beans
  • 0.25 cup Mexican cheese, shredded
  • 1 teaspoon chili powder
  • 0.5 teaspoon cumin
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Instructions
 

  • Grease the slow cooker with cooking spray.
  • In a large bowl, combine the eggs, onion, bell peppers, jalapeno pepper, black beans, cheese, chili powder, cumin, garlic powder, salt, and black pepper.
  • Pour the mixture into the slow cooker, cover, and cook on low for 4 to 6 hours.
  • Garnish with fresh cilantro and serve. Enjoy!
