Ingredients
  

  • 1 large eggplant, sliced into 1/2 inch thick rounds
  • 2 tablespoons olive oil
  • 0.5 cup feta cheese, crumbled
  • 0.5 cup pitted olives, sliced
  • 1 tablespoon fresh parsley, chopped
  • null Salt and pepper, to taste

Instructions
 

  • Preheat the grill to medium-high heat.
  • Brush the eggplant slices with olive oil and season with salt and pepper.
  • Grill the eggplant slices for 5-7 minutes per side, until lightly charred and cooked through.
  • Remove the eggplant slices from the grill and place on a platter.
  • Top the eggplant slices with crumbled feta cheese, sliced olives, and chopped parsley.
