Authentic Grilled Eggplant with Feta and Olives
- Grill, cutting board, knife, bowl, olive oil, salt, pepper
- 1 large eggplant, sliced into 1/2 inch thick rounds
- 2 tablespoons olive oil
- 0.5 cup feta cheese, crumbled
- 0.5 cup pitted olives, sliced
- 1 tablespoon fresh parsley, chopped
- null Salt and pepper, to taste
- Preheat the grill to medium-high heat.
- Brush the eggplant slices with olive oil and season with salt and pepper.
- Grill the eggplant slices for 5-7 minutes per side, until lightly charred and cooked through.
- Remove the eggplant slices from the grill and place on a platter.
- Top the eggplant slices with crumbled feta cheese, sliced olives, and chopped parsley.
- Serve warm and enjoy!
