Ingredients
  

  • 1 large eggplant, sliced into ½ inch thick slices
  • 2 tablespoons olive oil
  • null Salt and pepper, to taste
  • 1 cup feta cheese, crumbled
  • 0.5 cup Kalamata olives, pitted and sliced
  • 0.25 cup green olives, pitted and sliced

Instructions
 

  • Preheat grill to medium heat.
  • Brush the eggplant slices with olive oil and season with salt and pepper.
  • Grill the eggplant for about 5 minutes per side, or until lightly browned and cooked through.
  • Transfer the eggplant to a serving plate and top with the feta cheese, Kalamata olives, and green olives.
  • Serve immediately.
