Large pot, cutting board, knife, wooden spoon, measuring cups and spoons
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 can (14 ounces) diced tomatoes, undrained
- 4 cups vegetable broth
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 cup uncooked elbow macaroni
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 0.5 teaspoon salt
- 0.25 teaspoon pepper
- 0.25 cup chopped fresh parsley
In a large pot over medium heat, heat olive oil. Add onions, carrots and celery and cook for 5 minutes, stirring occasionally.
Add garlic and cook for an additional minute.
Add tomatoes, vegetable broth, beans, macaroni, oregano, basil, salt and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.
Stir in parsley and serve.
