Ingredients
  

  • 2 large eggplants, sliced into thin rounds
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 0.5 cup feta cheese, crumbled
  • 0.5 cup black olives, sliced
  • 0.25 cup fresh parsley, chopped
  • 2 lemon wedges

Instructions
 

  • Preheat the grill to medium-high heat.
  • Brush the eggplant slices with the olive oil and Italian seasoning.
  • Place the eggplant slices on the preheated grill and cook for 5-7 minutes, flipping once, until they are tender and lightly charred.
  • Top the eggplant slices with feta cheese, olives, and chopped parsley. Squeeze the lemon wedges over the top.
  • Serve the grilled eggplant warm with a side of your favorite salad or grilled vegetables.
