Ingredients
  

  • 2 large eggplants, cut into 1/2-inch thick rounds
  • 2 tablespoons olive oil
  • 0.5 cup feta cheese, crumbled
  • 0.5 cup pitted olives, chopped
  • 0.25 cup fresh herbs, chopped (I like to use oregano and basil)

Instructions
 

  • Preheat grill to medium-high heat.
  • Brush each eggplant round with olive oil on both sides.
  • Place eggplant rounds on the grill and cook for 5-7 minutes, flipping halfway through.
  • Once the eggplant is cooked through and golden, remove from the grill and place on a plate.
  • Top each eggplant round with feta cheese, olives, and herbs. Serve immediately.
