Ingredients
  

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (14.5 oz) can diced tomatoes, drained
  • 1 (15 oz) can corn, drained
  • 1 cup shredded cheddar cheese
  • 3 tablespoons chopped fresh cilantro

Instructions
 

  • In a large cast iron skillet, heat the olive oil over medium heat. Add the onion and bell pepper and cook until softened and fragrant, about 5 minutes.
  • Add the garlic, cumin, chili powder, smoked paprika, salt and pepper. Cook for 1 minute, stirring constantly.
  • Add the black beans, diced tomatoes, and corn. Stir to combine and cook for 10 minutes.
  • Remove from heat and stir in the shredded cheese and cilantro. Serve warm.
