- 2 tablespoons olive oil
- 1 onion, diced
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1 (15 oz) can black beans, rinsed and drained
- 1 (14.5 oz) can diced tomatoes, drained
- 1 (15 oz) can corn, drained
- 1 cup shredded cheddar cheese
- 3 tablespoons chopped fresh cilantro
In a large cast iron skillet, heat the olive oil over medium heat. Add the onion and bell pepper and cook until softened and fragrant, about 5 minutes.
Add the garlic, cumin, chili powder, smoked paprika, salt and pepper. Cook for 1 minute, stirring constantly.
Add the black beans, diced tomatoes, and corn. Stir to combine and cook for 10 minutes.
Remove from heat and stir in the shredded cheese and cilantro. Serve warm.
