Ingredients
  

  • 3 ears corn, husked and cut off the cob
  • 0.25 cup mayonnaise
  • 0.25 cup sour cream
  • 0.25 cup cotija cheese, crumbled
  • 0.25 cup fresh cilantro, chopped
  • 0.25 teaspoon chili powder
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon ground cumin
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • null juice of 1 lime

Instructions
 

  • Bring a pot of water to a boil.
  • Add the corn and cook for 7-10 minutes until tender.
  • Drain and set aside to cool.
  • In a large bowl, whisk together mayonnaise, sour cream, cheddar cheese, cilantro, chili powder, garlic powder, cumin, salt, and pepper.
  • Add the cooled corn and lime juice to the bowl and mix until combined.
  • Serve the salad chilled or at room temperature.
