- 6 eggs
- 1 tomato, chopped
- 0.25 cup olives, chopped
- 0.25 cup feta cheese, crumbled
- 0.25 cup fresh herbs (parsley, oregano, basil, thyme), chopped
- 1 tablespoon olive oil

Heat a large skillet over medium heat. Add the eggs and season with salt and pepper. Cook, stirring occasionally, until the eggs are cooked through.
Add the chopped tomatoes, olives, and feta cheese to one side of the omelette. Fold the omelette over to cover the filling. Cook for 2-3 minutes, until the cheese is melted and everything is cooked through.
Sprinkle the omelette with the fresh herbs and drizzle with olive oil. Serve immediately.
