Ingredients
  

  • 6 eggs
  • 1 tomato, chopped
  • 0.25 cup olives, chopped
  • 0.25 cup feta cheese, crumbled
  • 0.25 cup fresh herbs (parsley, oregano, basil, thyme), chopped
  • 1 tablespoon olive oil
  • null Salt and pepper, to taste

Instructions
 

  • Heat a large skillet over medium heat. Add the eggs and season with salt and pepper. Cook, stirring occasionally, until the eggs are cooked through.
  • Add the chopped tomatoes, olives, and feta cheese to one side of the omelette. Fold the omelette over to cover the filling. Cook for 2-3 minutes, until the cheese is melted and everything is cooked through.
  • Sprinkle the omelette with the fresh herbs and drizzle with olive oil. Serve immediately.
