  • Large bowl, medium bowl, whisk, measuring cups and spoons

Ingredients
  

  • 2 cans corn, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 0.5 cup diced red onion
  • 1 jalapeño, diced
  • 0.5 cup cilantro, chopped
  • 1 lime, juiced
  • 1 tsp chili powder
  • null Salt and pepper to taste
  • 1 cup tortilla chips, crumbled
  • 1 cup Cotija cheese, crumbled

Instructions
 

  • In a large bowl, combine the corn, black beans, red onion, jalapeño, cilantro, lime juice, chili powder, salt and pepper.
  • Toss to combine.
  • Add the crumbled tortilla chips and Cotija cheese and toss gently.
  • Refrigerate for at least 1 hour before serving.
