Ingredients
  

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 2 tablespoons sugar
  • 1 cup milk
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 apple, peeled and diced
  • 2 tablespoons butter
  • 1 teaspoon cinnamon
  • 2 tablespoons maple syrup

Instructions
 

  • In a large bowl, whisk together the flour, baking powder, baking soda, salt and sugar.
  • In a separate medium bowl, mix together the milk, oil, vanilla extract and egg.
  • Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  • In a medium skillet over medium heat, melt the butter. Add the apple and cinnamon and cook until the apples are softened. Set aside.
  • Heat a griddle or large skillet over medium heat. Grease the griddle with butter or cooking spray. Pour ΒΌ cup of the pancake batter onto the griddle. Sprinkle a few pieces of the cooked apples on top. Cook until the edges are set and bubbles start to form. Flip and cook for an additional 2 minutes or until golden brown.
  • Serve the pancakes topped with the remaining cooked apples and a generous sprinkle of cinnamon and a dollop of maple syrup.
