Heat a griddle or large skillet over medium-high heat.
Spread the butter on one side of each slice of bread.
Place two slices of bread, butter-side down, on the griddle. Top each slice with a slice of cheese and sprinkle with the herbs, salt, and pepper.
Top with the remaining slices of bread, butter-side up.
Cook for 2-3 minutes, or until the cheese is melted and the bread is golden brown.
Carefully flip the sandwiches and cook for another 2-3 minutes, or until golden brown.
Serve warm.
