- Heat a griddle or large skillet over medium-high heat. 
- Spread the butter on one side of each slice of bread. 
- Place two slices of bread, butter-side down, on the griddle. Top each slice with a slice of cheese and sprinkle with the herbs, salt, and pepper. 
- Top with the remaining slices of bread, butter-side up. 
- Cook for 2-3 minutes, or until the cheese is melted and the bread is golden brown. 
- Carefully flip the sandwiches and cook for another 2-3 minutes, or until golden brown. 
- Serve warm.
