In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
In a separate bowl, whisk together the milk, melted butter, and egg.
Pour the wet ingredients into the dry ingredients and mix until just combined.
Fold in the diced apples.
Heat a large non-stick skillet over medium heat and grease with butter or cooking spray.
Scoop about 1/4 cup of the batter onto the skillet for each pancake and cook until golden brown and cooked through, about 3-4 minutes per side.
Serve with butter, syrup, whipped cream, or ice cream, if desired.
