Variations

Ingredients
- 2 cups grated zucchini
- 0.25 cup all-purpose flour
- 0.25 cup shredded cheese
- 0.25 cup chopped fresh herbs (I used chives and parsley)
- 2 eggs, lightly beaten
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
Instructions
- Preheat oven to 375°F.
- In a mixing bowl, combine the grated zucchini, flour, cheese, herbs, eggs, salt, and pepper.
- Mix until everything is well combined.
- Using a spoon, scoop the mixture into small patties and place them on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes, or until the fritters are golden and crispy.
- Serve with a dollop of spicy aioli, if desired.
