This savory grilled eggplant dish with feta and olives was inspired by my annual summer barbecue. Every year, my family and I gather around the grill to enjoy the smoky flavor of grilled vegetables. I wanted to recreate that flavor in an easy and delicious way, so I came up with this recipe. It’s a simple dish that’s packed with flavor and only takes a few minutes to make. Plus, it’s a great way to get your daily dose of vegetables and protein.
The star of this dish is the grilled eggplant. I like to slice it into thick slices and grill it until it’s lightly charred. To give it a Mediterranean twist, I add feta cheese and olives. The combination of the creamy feta and salty olives gives the eggplant a delicious flavor. To finish it off, I top it with a light drizzle of olive oil and a sprinkle of freshly chopped parsley.
This savory grilled eggplant dish is perfect for an outdoor barbecue, but it can also be enjoyed as a light lunch or as a side dish. It’s a great way to get your veggies in and it’s sure to be a hit with your family and friends!
Variation: For a spicy kick, add 1/2 teaspoon of red pepper flakes to the eggplant mixture before grilling.
