I wanted to recreate that flavor in an easy and delicious way, so I came up with this recipe. It’s a simple dish that’s packed with flavor and only takes a few minutes to make. The star of this dish is the grilled eggplant. I like to slice it into thick slices and grill it until it’s lightly charred. To give it a Mediterranean twist, I add feta cheese and olives. Ingredients
  

  • 1 eggplant
  • 0.25 cup feta cheese, crumbled
  • 0.25 cup black olives, sliced
  • 2 tablespoons olive oil
  • 2 tablespoons chopped fresh parsley

Instructions
 

  • Preheat the grill to medium heat.
  • Cut the eggplant into thick slices and place in a large mixing bowl.
  • Add the feta cheese, olives, and olive oil and mix until combined.
  • Place the eggplant slices on the preheated grill and cook for 3-4 minutes per side, or until lightly charred.
  • Transfer the eggplant to a serving plate and top with the chopped parsley.
