Savory Grilled Eggplant with Feta and Olives

Ingredients
- 2 large eggplants
- 0.5 cup feta cheese
- 0.5 cup olives, sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 0.5 teaspoon ground black pepper
- 0.25 teaspoon salt
Instructions
- Slice the eggplants into 1-inch thick slices and place in a large bowl.
- Drizzle the olive oil over the eggplant slices and sprinkle with garlic, oregano, black pepper, and salt. Mix until the slices are evenly coated.
- Preheat the grill over medium-high heat and place the eggplant slices on the grill. Grill for 5-7 minutes on each side, or until the eggplant is tender and lightly charred.
- Remove the eggplant slices from the grill and place on a serving plate. Top with feta cheese and olives.
