Savory Grilled Eggplant with Feta and Olives

Ingredients
- 2 large eggplants, cut into 1/2-inch thick rounds
- 2 tablespoons olive oil
- 0.5 cup feta cheese, crumbled
- 0.5 cup pitted olives, chopped
- 0.25 cup fresh herbs, chopped (I like to use oregano and basil)
Instructions
- Preheat grill to medium-high heat.
- Brush each eggplant round with olive oil on both sides.
- Place eggplant rounds on the grill and cook for 5-7 minutes, flipping halfway through.
- Once the eggplant is cooked through and golden, remove from the grill and place on a plate.
- Top each eggplant round with feta cheese, olives, and herbs. Serve immediately.
